Garlic mozarella bread toast

Ingredients
1) bread loaf (sliced)
2) butter (melted) (no restrictions)
3) ginger garlic paste ~ 1 teaspoon
3) grated garlic (2~3)
4) oregano ( 1 teaspoon)
5) mozarella cheese

Procedure

Take a bowl..Down in the melted butter...Add the grated garlic, ginger~garlic paste and the oregano...Stir well until the mixture is uniform..Brush the mixture generously on both the side of the slices..Heat a non stick pan and under low heat toast both the sides..Top it with a nice amount of mozarella until it melts and serve hot!!

Rava dosa with embedded Shrimps

Ingredients
1) fresh prawns finely chopped -200 gms (deshelled and head removed)
2) ghee
3) dosa batter
4) chilly powder
5) turmeric powder
6) 2 cups semolina(rava)
7) 1/2 cup rice flour
8) 1/2 cup butter milk
9) 4 green chillies
10) asafoetida 1/4 tsp
11) peppercorns 1 tblspn
12) ginger an inch
13) cumin seeds 1 tsp
14) curry leaves
15) vegetable oil
16) salt to taste
17) 1/4 cup grated coconut
Procedure
Take a bowl ..Blend the rava and rice flour with  butter milk until you get a fine batter..Add asafoetida and required salt..let it stand for 5-6 hrs
Now take a kadai and add some vegetable oil..Pop in the peppercorns ,green chillies,curry leaves with cumin seeds once the oil is heated..After a minute add the chopped shrimps and stir fry it ..Add chilly and turmeric powder according to your convenience and finally salt to taste...Turn off the stove once the shrimp is cooked..
In the batter add the grated coconut ,grated ginger and the prawn mixture..Stir it nicely..
Take a tawa and  smear it with Indian ghee..Using the large round spoon scoop a generous amount of the batter and smear it in a concentric manner..Once both the sides are light brown, using a spatula the dosa is lifted gently..serve with coconut chutney or can be eaten plainly..

Kellogs chocos cheescake

Ingredients (for the base)
1) 150 gms kellogs chocos cornflakes
2) salted butter (75 gms)
3) caster sugar (130 gms)
4) eggs-3
5) egg yolks-3
6) vanilla extract (1.5 teaspoon)
7) cream cheese (600 gms)
8) lemon juice -1.5 tablespoon
For the topping
1) sour cream (100 gms)
2) caster sugar(1 tablespoon)
3) vanilla extract- 0.5 teaspoon
4) white chocolate/ milky bar (50 gms)
Procedure
Add the chocos into a bowl and whisk it gently until it is processed...Add the butter and repeat the process until you get a fine dark mixture..Take a springfoam pan and gently spread the mixture with your hand or back of a spoon into it...spread it in such a manner such that the border is a bit elevated..Keep it in a refrigerator for like half an hour until it is set..Now preheat the oven to 180 celsius..Take a bowl and gently whisk the cream cheese , castor sugar ,eggs,egg yolks together with the essence and lime juice...Line the outside of the springfoam pan with a foil such that the bottom and the sides are covered...It prevents the water from entering when the pan is put into the roasting tin...Now add the cheese mixture onto the crust which is set...Take a roasting pan and now put the springfoam pan with the mixture onto it..Fill the tin with water such that it does'nt cross more than half of the pan level..Adding too much water makes it too difficult to lift in the end...Bake for like 50 minutes until the cake is set  but make sure it doesnt get too rigid or soggy in the centre..Now whisk in the sourcream, milk chocolate and the essence in a bowl and pour the mixture on top and bake for an other 10 minutes...Once baked remove the roasting tin first...Then gently remove the foil from the springfoam pan and let it cool down...Refrigerate for 20 minutes and slice it gently using a knife dipped in hot water..Garnish it with fresh strawberries

Classy omelette

Ingredients
1) Eggs (3)
2) chopped black olives
3) tomato (3/4th)
4) pepper powder
5) oregano 1tsp
6) chilly powder
7) butter
Salt to taste
8) feta cheese
Procedure
Whisk the eggs in a bowl and add all the ingredients..Take a non stick pan and add a tablespoon of butter..once heated pour in the mixture and simmer down the heat until both the sides have turned golden brown..sprinkle with feta cheese and serve hot

Sausage toast

Intoastgredients
1)  chicken frankies
2) pepper powder
3) butter
4) bread slices
5) mayonaisse
6) tomatoes
6) lettuce
7)tomato puree/sauce

Procedure Heat the non stick pan..Add Some butter..stir fry the sliced sausages and add the salt and pepper..now pour in a couple of tablespoon of the tomato sauce....once the sausage is cooked turn of the heat..spread the bread slices with a generous amount of mayonaisse and add sliced tomatoes and lettuce with the sausage mixture..gently toast the sandwich using a toaster until it is crispy and serve hot..

Sweet tangy masala dosa

                               Sweet tangy masala dosa


Ingredients

1) Potatoes (3 large)
2) Mustard seeds
3) lemon juice (1)
4) curry leaves
5) few sprigs of coriander
6) tamarind juice (1/4 thcup)
7) 4 green chillies
8) turmeric powder
9) jaggery in 1/4th cup of water
10) chilly powder
11) ghee (4 tbsp)

Procedure

Heat the ghee in a kadai..When heated add the mustard and wait till it splutters..Now add the curry leaves and chopped green chillies...Add the chopped potatoes and keep stiring while the heat is low..Add a pinch of turmeric and chilly powder..Now pour in the tamarind and  jaggery juice and let the potato get in all the flavours..Add salt to taste and mix well  until the potato is cooked..sprinkle it with a dash of lime and coriander.

Procedure to make dosa is mentioned in the earlier post..

Make 80-100 gms balls of the mixture and place it on the dosa and fold it...serve hot with mint chutney..

 





SUNNY SIDE DOWN

                                

 Ingredients ( serves 1)


1)  Eggs (2)
2)  potato ( 1/2)
 3) garlic grated (1/2 bud)
4) pepper powder
5 salt to taste
6) chilly hot and sour sauce
7) butter
8) tomato puree
9) Sugar
10) chilly powder

Procedure

Heat the pan..Add the butter..Now add the grated potato and grated garlic ..add pepper, chilly powder and salt to taste..Mix it gently and once the onion starts turning colour add 2 tablespoon of tomato puree and a litlle bit of chilly sauce according to your convenience..Add half a teaspoon of sugar so that the potato gets caramelised ...keep the mixture aside Now take an other pan ,add a little bit of butter and once heated add both the eggs ..sprinkle salt and pepper...and top it with the potato mixture..simmer down the heat and gently scoop it with the spatula...serve with hash browns



TWISTED BOMBAY TOAST

                                 

   Ingredients

 1) bread (1 loaf sliced)
 2) eggs( 4-5)
 3) chillies grated( 3-4)
4)  pepper powder
5)  butter
6)tomatoes grated (1)
7) onion grated( 1)
8) chilly powder
9) any cheese( mozarella,parmesan,feta)

Procedure
 Take a large bowl...add the eggs and start whisking gently...Add the grated chillies , onion, tomato and the pepper & chilly powder..soak in the bread slices ...Add salt to taste and keep aside for 5-10 minutes so that the bread absorbs the mixture completely..Heat the non stick pan and add in a dollop of butter with a little bit of oil...once it is nice and hot place the soaked bread slices on to the pan ..using the spatula gently turn on to the other side..sprinkle the cheese on top until it melts..
serve hot....

PARATHA SANDWICH

                                     


  Ingredients

 1)  left over chicken tikka/ curry pieces
 2)  pepper
 3) tomatoes
 4) coriander
 5) pepper powder
6) cheese spread
7) butter/olive oil
8) garam masala

Procedure

Heat the pan and add the butter/ olive oil...shred the leftover pieces and stir fry it..simmer down the temperature while stiring..now sprinkle in the pepper and the garam masala according to your convenience...(warning: don't add too much of garam masala)..and add the tomatoes in the end...add salt to taste..turn off the heat and keep the mixture aside..Now heat the paratha on both the sides until it turns fluffy and smear it with the cheese spread fillin in the mixture and fold it and wrap it...As simple as that :-D

Deep fried idli with sweet dates chutney

                      



Ingredients

1)  Few left over idlis
2) chilly powder
3) rava powder
4) tomato sauce
5 grated green chillies
6) curry leaves


Procedure

Cut the idlis into pieces..for eg. 1 idli to 4 pieces...then add all the ingredients and coat it with a bit of rava and deep fry..

For the chutney

    Ingredients
  • 2 cups of deseeded dates
  • ¼ cup deseeded tamarind
  • 1 cup jaggery
  • 1 teaspoon chilli powder
  • Salt to taste

    Procedure

Heat 4 cups of water in a sauce pan and add all the ingredients and simmer for 30 minutes.
Alternatively, you can place all the ingredients in the pressure cooker for 2 whistles and turn off heat. Allow the pressure to release itself and then proceed with intructions below.
Cool the mixture and puree into a smooth paste in a blender. Strain to remove any residue and use as required. Store Refrigerated or freeze for about 3 months.

Makes two cups...

Serve ithe idlis hot with the chutney

      














Dosa with chicken franks and mayo

     

Ingredients

For the dosa ( serves 4)

  • 1)  .1½ cup Rice
  • 2)    ¾ cup Urad dal
  • 3)   ½ cup Thick Poha
  • 4 )   Salt to taste
  • 5)    3 tsp Methi seeds

  • FOR THE FILLING

  • 1)   8 sausages (diced)
  • 2)  mozarella cheese
  • 3) mayonaisse
  • 4) pepper and salt
  •  5) chilly sauce
  • 6) tomato sauce
  • 7) coriander leaves
  • 8)  2 onions
  • 9) grated garlic (1-2)
  • 10) chilly powder



PROCEDURE(filling)

Heat a non stick tawa...Addi n a dollop of butter...Now add a bit of oil to the butter...once it is heated add the grated garlic  and then put in the sliced onions...keep  stiring for a while untll the onions are light brown..Now add the sausages and stir it gently using the spatula...add the chilly powder,pepper , tomato and the chilly sauce as well...keep stiring for like an other 3-4 minutes until the sausage is cooked...now sprinkle with a gentle amount of mozarella and turn off the heat..


Directions( dosa)

  1.  Soak Rice, Poha & Methi seeds with warm water for about 6-7 hrs.
  2.  Soak dal with warm water for about 4-5 hrs.
  3.  Grind Rice, Poha & Methi mixture to a fine paste & keep aside.
  4.  Grind Urad dal seperately to a fine paste.
  5.  Mix well both the paste. Add Salt & mix again for 4-5 times.
  6.  Keep the mixture in a warm place for fermentation. Best is overnight.
  7.  Before making dosa, once again mix the batter well 2-3 times
NOTE: Donot add too much water while grinding. The batter should be slightly thick. Water can be added to the batter before making the dosa.


Procedure


Take a non stick pan...Add a teaspoon of indian ghee..Using the rounded dosa spoon smear the pan with the batter in a concentric manner once the pan is really hot...Turn it using the spatula until the other side is light golden brown and smear it with a little more ghee ..



Now the dosa must be spread with the mayonaisse  and filled with the sausage mixture...sprinkle it with coriander leaves and serve it hot :)
























Retro omelettte

 Want to start a start a day with a good , hearty breakfast....oh yes I've experimented and customised few dishes  on my own....I'll be listing out a few in my upcoming blogs ...Now here is the the most simple and
easy to prepare ones as I start with..


ingredients
 1.  3 eggs
 2.  butter
 3.  ginger garlic paste
 4. milk powder
 5. pepper powder
 6. chilly powder
 7. non stick pan (obviously :P)

PROCEDURE

    Take a bowl...down in the eggs...whisk it gently...keep aside..take a glass and put in  3/4th tablespoon of milk powder and mix it with two tablespoon of water..pour this thick milky mixture into the already whisked egg..now add salt and pepper and the chilly powder...add it according to your convenience..the more spicier, the better..put a dollop of butter on the pan..add in a bit of oil so that the butter does'nt burn...add 1/4th teaspoon of ginger garlic paste and  gently stir it until a nice aroma comes in...pour the egg mixture on the pan and turn down the flame to the minimum...using the spatula turn it to the other side and make sure both the sides look golden brown...

NOTE
Goes well with toasted bread
